Doug Aslesen is the sole owner of the new restaurant, which will be known as The Grill at the Palace Mall. It will be located in the 1800 block of North Main Street, inside the space that formerly housed Steak N’ More, which recently closed after being in business since 2005.

Aslesen said he and his wife, Barbara, began working on the new restaurant in early December.

“It will be everything from burgers to steaks,” Aslesen said.

The new restaurant’s chef will be Dave Stock, who has worked as kitchen manager at Chef Louie’s for the past 14 years.

“He’s bringing a lot of signature dishes that he has specialized in and made,” Aslesen said.

The Grill at the Palace Mall will regularly open at 5 p.m. Tuesday through Saturday, and offer seating for up to about 80 people. The restaurant already employs more than 10 people.

Aslesen said he was surprised and disappointed by the closure of Steak N’ More, a restaurant he helped start but sold nearly two years ago. The new restaurant will utilize about half the space of Steak N’ More, Aslesen said.

“I wasn’t really looking to do as much,” he said. “I wanted to specialize more and not just try to work on volume.”

Aslesen is also the owner of Thirsty’s Bar, which is also located in the Palace Mall.
