Jimmy John's to open in Mitchell
A Jimmy John's Gourmet Sandwiches store will open in Mitchell this year.
The store will be placed in the north side of the Graham's Interstate BP building at 1610 S. Burr St., according to Tyler Graham. An existing casino will be relocated to an addition on the south side, Graham said. More than 280 square feet will be added to the building.
Scott Honner, of Sioux Falls, is the owner and general manager of the planned store. Honner also owns a Jimmy John's in Vermillion.
"I have a lot of friends who live in Mitchell, and I have spent a lot of time in Mitchell," Honner said. "Overall, it's a great community, and it needs development. We want to take advantage of that great interstate traffic."
The Mitchell Planning and Zoning Commission approved a plan for the new restaurant during its regular meeting Monday at City Hall.
Work starts Thursday, Graham said, since the plan does not need City Council approval. He didn't have a date for when it will open.
"We're hoping to do it as fast as we can," Honner said. "In Vermillion, there were a lot of twists and turns in the process. But we're hoping to be open for some of that summer traffic."

Honner said the store will need 25 to 35 employees. His Vermillion store needs up to 50 workers, he said, but that's due to the thousands of college students who live there.
